- Heat oil in a large pan over medium heat. Add zucchini and bell pepper. Sauté about 5 minutes, or until soft. You could also grill or roast the vegetables.
- Meanwhile, simmer marinara in a small pan over low heat 5 to 7 minutes, or until warmed through. Toast the rolls.
- Divide rolls among 4 plates. Spoon marinara on the bottom half of each roll. Top with bell pepper, zucchini, and cheese. Add lettuce and tomato, if desired. Place top half of roll on sandwich.
