Try this vegetarian twist on a tikka masala, where the typical chicken is replaced with chickpeas

- Heat oil over medium heat and add onion. Cook until onion has softened, about 5 minutes. Add ginger, jalapeno, garam masala, and tomato paste; cook for 1 minute.
- Add salt, crushed tomatoes, and chickpeas. Bring to a simmer and cook, covered, for 15 minutes. Just before serving, stir in cilantro.
