- In the bottom of a large salad bowl, combine the extra-virgin olive oil, 1 Tbsp lime juice, 1/3 cup water, and salt and whisk well.
- Add the baby arugula, mango, 1 diced cucumber, avocado, and 1/4 cup chopped red onion and toss well. Top with pomegranate seeds and serve immediately.
