Simple, easy, and quick to make, this healthy salad has it all—the creaminess from the avocado, the crunch from the pumpkin seeds, and the flavor from the lime juice and red pepper flakes

- Arrange tomato slices (overlapped slightly) across bottom of large serving platter. Season with salt.
- Layer avocado slices on top of tomatoes. Sprinkle with cilantro and pumpkin seeds, and drizzle with lime juice and olive oil.
- Season with red pepper flakes and additional salt, to taste.
