- Cook spinach according to package directions. Drain and set aside.
- Heat 1 tablespoon of the oil in skillet over medium-low heat. Cook onion until soft. Add flour and remaining oil, and whisk 3 minutes. Whisk in milk, pepper, and nutmeg. Raise heat to a low boil. Reduce to simmer, and cook 3 minutes. Remove from heat.
- Stir in Parmesan, yogurt, and spinach. Return to heat. Cook until warmed through.
