- Heat oven to 425°F.
- Cut vegetables into 1- to 2-inch pieces. Place in large roasting pan or on large baking sheet. (Use two baking sheets, if necessary).
- Drizzle vegetables with oil and toss to coat well. Spread vegetables evenly on pan, and sprinkle with generous pinch of salt and pepper.
- Roast for 10 minutes, then stir vegetables. Return to oven and roast until tender and golden brown, 10 to 15 more minutes.
- Handy Hint: Toss in a few sprigs of fresh thyme or a generous pinch of your favorite spice (such as crushed red pepper flakes, paprika, rosemary, or herbes de Provence) to change up the flavor profile of this hearty side dish.
