- Heat the oil in a soup pot over medium heat. Add the onion, carrot, and celery; cook 4 to 5 minutes.
- Add the squash, apples, broth, water, and seasonings. Bring to a boil. Reduce heat, cover, and simmer about 30 minutes until squash is tender.
- In batches, puree the soup using a blender, or use an immersion blender.
